都说成都是小吃的国,第一个在你脑子里蹦跶的小吃是哪个?伤心凉粉、锅盔、担担面还是钟水饺?你说你不能吃辣?Nonono, 不能吃辣不代表就与成都小吃无缘,糯米制的甜食不仅不辣,而且软糯有嚼劲,深受成都朋友们的喜爱。

糖油果子 Fried Sweet Ball



糖油果子也叫天鹅蛋,是成都著名的传统小吃,一千多年前的宋代管它叫焦䭔(jiao dui)。捏粉子、烧油、下红糖,待油烧沸后就让一个个粉团子在红糖油锅中泡澡,热油被粉团吸收再渗出,不停发出让人流口水的“滋滋”声,等到小粉团一个个都嘭、嘭、嘭起来,裹上糖衣后便可出锅。如果你守着师傅要一份现炸的糖油果子,你一定会感到自己被清甜的香气包围。迫不及待吃上一个,清脆的糖衣咔嚓作响,酥松软糯的内芯一分为二,红糖、糯米、芝麻在你嘴里香气爆炸,一次能吃一大筐!

红糖糍粑是另一种形式的糯米制品小吃,被亲切地称为“火锅伴侣”,是一道用于开胃解辣的必点小吃。常见于各色火锅、串串店和中餐厅。将糯米煮熟,像砸年糕一样重力击打并碾压糯米,使其变得粘稠后做成方形,切片下锅油炸,炸至金黄,糯米被一层硬壳包裹后便可出锅,再淋上提前熬好的红糖汁、撒上花生面儿……口感不像糖油果子那么有嚼劲,但也是外皮酥脆,内里更软绵。如果你正被辣的“吸溜吸溜”、面红耳赤,一块红糖糍粑下去可保你无虞。

每种食物都有自己的声音,前两种小吃就是被油炸的“滋滋”声,那么当你听到“砰、砰、砰”的声响时,就是另一种特色小吃三大炮了。由于案板一边放有钢碟,当一坨坨糍粑团子被甩到案板时,会击打震动发出金属响声,就听着“砰砰砰”三声,三坨糍粑又从案板飞向对面斜靠的竹簸上滚入下面装满芝麻粉、黄豆粉的竹簸中,此时再将三坨糍粑捡入盘中(此时糍粑已自然地裹上了一层粉末),浇上浓汁,就可以吃啦!入口仍感温热,香甜可口,不黏不腻又会及时化渣。在逛到腿脚酸痛的时候,来上一份三大炮,小编还能再怒走十公里!(呵呵呵呵)
