店家常年累月地生着旺火，烫着粉丝。不管是打扮入时的姑娘，穿着睡衣的大妈，还是风尘仆仆的旅人……他们挤在小店里，点上一碗鸭血粉丝，加一份小笼包，辣油一舀，人生的烟火气与食物的香气扑鼻而来。

有消息说，南京正在制定鸭血粉丝汤的地方标准，这是真的吗？
南京市食品药品监督局回应：去年他们和南京餐饮商会调研过，目前鸭血粉丝汤的地方标准还在研究制定中。
南京餐饮商会表示：给鸭血粉丝汤制定地方标准，也是想比照盐水鸭和板鸭，为其申遗做准备。
南京"回味鸭血粉丝汤" 工作人员表示，自家的鸭血粉丝汤没有绝对的标准，只有阶段标准，会根据顾客意见和口味不断调整。
南京"鸭得堡" 鸭血粉汤店则回应称，这种标准的设定比较尴尬，“鸭血粉丝每家有特色，有一些创新品牌，做酸辣口味，还有做麻辣口味的，我们还是做传统的。”
官方版的鸭血粉丝汤地方标准何时出台，目前还没有明确。根据非物质文化遗产法，只有饮食制作传统技艺和饮食习俗可以申报非遗。
一些老南京人说，鸭血粉丝汤在南京出现也就是在上个世纪七八十年代左右，之前只有"鸭血汤"。这样看来，仅仅出现才几十年的鸭血粉丝，是否合适申遗还要存疑。
According to some old Nanjing residents, they hadn’t tried duck blood and vermicelli soup until the 1970s and 1980s. It was only duck blood soup that has exited long time in their life. Thus there is still doubt whether duck blood and vermicelli soup is qualified for being on the list of intangible cultural heritage.
2016年，西安发布了羊肉泡馍等5个地方小吃制作技术规范；前年，扬州市质监局也曾发布过"扬州炒饭"新标准。对此，有业内人士认为，标准仅供参考，好口碑的美食，总是因人因时因地的产物，鸭血粉丝汤同样如此，汤底可浓可淡，配料种类可少可多，关键是好吃就好、食客认可就好。
你知道吗？南京有10项饮食制作技艺是省级非遗，有5项饮食制作技艺是市级非遗。
南京市非遗保护中心的专家表示，，饮食类一般归属到传统技艺或民俗这两个类别进行申报。像“南京板鸭、盐水鸭制作”“秦淮小吃”的传统技艺就是省级非遗，而“水八鲜饮食习俗”就是市级民俗类的非遗。
这位专家介绍：“饮食类非遗在申报中，评审专家会综合考虑其历史价值、文化价值、地域特色等，就传统技艺类项目而言，手工技艺的难易程度也会被列为考察的范畴。”
An expert of Nanjing Intangible Cultural Heritage Protection Center introduced that historical value, cultural value and regional features will be in overall consideration during reviews of applications for the food category of intangible cultural heritage. As for traditional skill genre, how difficult the making techniques are will also be investigated.
